Propriétés mécaniques des mousses et des émulsions

Une mousse liquide, constituée de gaz et de liquide, se comporte pourtant, aux échelles de temps de la rhéologie, comme un solide viscoélastique en réponse à de faibles contraintes, et comme un solide plastique sous forte contrainte. Aux échelles de temps plus longues, un fluage résulte du vieillissement. Plusieurs thèmes de recherche sont très actifs dans ce domaine : modélisation tensorielle du comportement mécanique des mousses, mesure des écoulements et des contraintes internes dans des géométries complexes, mesure du comportement d'éléments individuels d'une mousse.

Aspects physicochimiques des mousses et des émulsions

Plusieurs propriétés des mousses dépendent de leur physicochimie : drainage, stabilité, rhéologie. L'écoulement de liquide (drainage) ou la réorganisation des parois entre bulles (processus T1) induisent en effet des efforts sur les films de tensioactifs. De ce fait, selon les tensioactifs utilisés, différents mécanismes peuvent être dominants : viscosité de surface, absorption/désorption, élasticité de Gibbs. Le lien entre ces phénomènes microscopiques et le comportement observé à l'échelle de la mousse est encore mal compris : la physicochimie des mousses liquides est un domaine de recherche très actif.

Structure, morphologie et topologie des mousses et des émulsions

Dès lors qu'une mousse est suffisamment riche en gaz pour posséder un module élastique, les contacts entre bulles sont bien définis, et les processus qui sont à la base de la plasticité (processus T1 notamment) ont une signature topologique claire. Une description topologique des mousses, en particulier dans la limite sèche, s'articule avec des résultats connus sur les pavages de l'espace et apporte des résultats sur le mûrissement et sur la frustration.

De nouvelles mousses sont apparues, stabilisées par exemple par des (nano)-particules solides comme dans les émulsions Pickering. Génération de mousses ou émulsions, mousses/émulsions cristallines, micromousses

Pour obtenir une mousse aqueuse, il faut mélanger du gaz et une solution savonneuse. La distribution de tailles de bulles obtenue dans la mousse dépend alors fortement des caractéristiques du mélangeur. Ce mélange peut être réalisé dans un milieu poreux ou en faisant buller du gaz dans un liquide. Plus récemment, il est apparu que l'utilisation de canaux de taille micronique - couramment appelé canaux microfluidiques - permet de former une mousse remarquablement monodisperse. Les bulles obtenues sont alors tellement similaires que la mousse cristallise. La question de la structure cristalline obtenue depend de beaucoup de paramètres, comme la fraction volumique de liquide au sein de la mousse, et est encore une question ouverte.

Acoustique dans les mousses liquides

Parmi les méthodes non destructives développées pour sonder la structure et l'évolution d'une mousse in situ dans un processus en ligne ou dans des campagnes d'expériences sur le terrain, l'acoustique pourra constituer une méthode légère et robuste. D'actives recherches expérimentales et théoriques sont menées pour faire le lien entre la réponse acoustique des mousses et leurs propriétés structurelles et rhéologiques locales.

Aspects industriels des mousses et des émulsions

Certains processus industriels sont fortement couplés aux mousses. Il s'agit parfois d'améliorer le pouvoir moussant d'une solution, ou parfois au contraire de détruire une mousse existante. Dans un autre domaine, les mousses liquides servent de précurseurs pour la fabrication des solides alvéolaires qui ne sont autres que des mousses solides. Ces questions très concrètes sont à l'origine de plusieurs champs de recherches très actifs.
